1 cup flour
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 Tbsp butter, room temperature
3/4 cup sugar
1 egg
2 bananas
1 tsp vanilla
1/2 cup milk plus 1 Tbsp lemon juice
Preheat oven to 350° spray cooking spray into square pan. Combine first 4 dry ingredients in a small bowl.
Beat butter in a mixing bowl,add sugar, continue beating, add egg
banana & vanilla. Beat until thoroughly combined. Beat in flour & milk alternating each until just combined.
*batter may look curdled but it's ok
pour into pan & bake for 30 minutes.
You can switch up a little by adding nuts, chips, flavored extracts.

Sidedish Saturday October 8th 2011
Peel, dice & boil 6 potatoes. They should be just soft enough to eat. Drain.
Melt 4 tablespoons of butter in a medium pan. Add 5 tablespoons of broth* & about 2 tablespoons of dried chives, mix well.
Dump potatoes on top of butter broth mixture. Season to taste with salt & pepper. Mix well to coat potatoes.
Serves about 6.
*Tip: you can use any kind of liquid you want to suit your meal/taste.

Wet Wednesday - Tanline Slammer
1 part each Bacardi Coco, Orange & watermelon
pineapple & cranberry juice, a little more on the cran
splash of sour mix
Shake with ice, use an orange slice & a cherry for garnish

Menu plan Monday for the week of September 11th

What we ate last week:
Sunday - spaghetti with clam sauce, fried clams & broccoli(?)
French toast for breakfast
Monday - chicken rice & beans
Tuesday - lamb burgers, tater tots, cauliflower. I made this Tzatziki sauce but I really didn't like it; it smelled right on but the taste was off so I'll have to try it another time.
Grilled ham & cheese for lunch.
Wednesday - meatloaf with onion gravy, whipped potatoes & mixed vegetables
Thursday - I wasn't feeling too good so everyone had leftovers.
Friday - pork chops, scalloped potatoes, broccoli
Saturday - I got home late so we had soup & sandwiches
This week I made butternut squash muffins.

Savory Sunday 9-11-11
I really like to make a big spaghetti dinner on Sundays cause we are all home. Sometimes this doesn't work out because I get to the bakery too late & there's no Italian bread left.
Spaghetti bolognese is usually my main spaghetti dish. Depending on what I have i the freezer I also make a combination of meatballs, sausage, brasciole & short ribs.
Sorry but my sauce is a recipe I'm keeping to myself :-)
