3/4 tsp baking powder<br />
1/2 tsp baking soda<br />
1/4 tsp salt<br />
4 Tbsp butter, room temperature<br />
3/4 cup sugar<br />
1 egg<br />
2 bananas<br />
1 tsp vanilla<br />
1/2 cup milk plus 1 Tbsp lemon juice<br />
<br />
Preheat oven to 350° spray cooking spray into square pan. Combine first 4 dry ingredients in a small bowl.<br />
Beat butter in a mixing bowl,add sugar, continue beating, add egg<br />
banana & vanilla. Beat until thoroughly combined. Beat in flour & milk alternating each until just combined.<br />
*batter may look curdled but it's ok<br />
pour into pan & bake for 30 minutes.<br />

You can switch up a little by adding nuts, chips, flavored extracts.<br />

They should be just soft enough to eat. Drain.<br />

Melt 4 tablespoons of butter in a medium pan. Add 5 tablespoons of broth* & about 2 tablespoons of dried chives, mix well.<br />

Dump potatoes on top of butter broth mixture. Season to taste with salt & pepper. Mix well to coat potatoes.<br />

Serves about 6.<br />

Thursday - I wasn't feeling too good so everyone had leftovers.<br />
Friday - pork chops, scalloped potatoes, broccoli<br />
Saturday - I got home late so we had soup & sandwiches<br />

1/8 tsp salt<br />
1 tsp baking powder<br />
1/2 tsp cinnamon<br />
5 Tbsp applesauce<br />
1 Tbsp wheat germ <br />
<br />
Mix well. Ice cream scoop into cups. Bake for about 20 minutes. Insert toothpick for done-ness.<br />

<br />
1 family sized can Campbell's condensed cream of mushroom soup<br />
1 regular sized can of Campbell's condensed French onion soup<br />
<br />
Pour both into a large pot, then using the onion soup can filled with half water, half milk add that in too.<br />
Cook on medium heat til well combined, just before it gets to a boil add in about a pound of mini meatballs. <br />
Reduce heat to low, cover.<br />
Fill a large pot with water, bring to a boil, add salt & egg noodles. Cook approximately 6 minutes, drain.<br />
Plate up noodles & spoon out some meatballs & sauce.<br />
<br />
*Tip: The meatballs heat up just fine in the time it takes to make the noodles. I use pre-made pre- cooked ones from the grocery store. If you use frozen I recommend completely defrosting them first or else allow them to simmer in the sauce longer until they are heated through.<br />

2 cans of asparagus spears, drain well then chop<br />
1 1/2 cups mayonaisse<br />
1 1/2 cups grated parmesan cheese plus more for sprinkling on top<br />
2 cloves chopped garlic<br />
salt & pepper to taste<br />

Preheat oven to 350 degrees.<br />
Mix all ingredients together. Place in a baking dish. Bake for 20 - 25 mnutes til brown & bubbly.<br />
Remove from oven & sprinkle with more cheese.Serve hot with lightly toasted French bread rounds.<br />

* This is DELICIOUS! When I made it I used 3 garlic cloves & did not add salt & pepper (I think parmesan is salty enough, I may even cut back on the amount of cheese next time I make it)<br />
I did not use it as a dip, I spread it on small loaves of French bread for roast beef & sauteed onion sandwiches.<br />

3 Tbsp lemon juice<br />
1 cup flour<br />
1 cup whole wheat flour<br />
2 tsp baking powder<br />
1 1/2 tsp cinnamon<br />
1/2 tsp allspice<br />
pinch of nutmeg (optional)1/4 tsp salt<br />
3/4 cup light brown sugar (packed)<br />
3 Tbsp canola oil<br />
1 lightly beaten egg<br />
1 tsp vanilla extract<br />

Preheat oven to 350. Spray a loaf pan with cooking spray.<br />
Peel & grate apples; toss with lemon juice to prevent browning.<br />
<br />
Combine flours, baking powder, cinnamon, allspice, nutmeg & salt in a large bowl.<br />
Combine apples, sugar, oil, egg & vanilla in a medium bowl. Mix well, add to dry ingredients. Stir until just blended & transfer to pan.<br />
Bake for one hour or until toothpick comes out of center almost clean.<br />
Cool in pan on rack for 10 minutes, then remove from pan to cool completely.<br />

1/2 tsp baking soda<br />
1/4 tsp salt<br />
1 c. quick oats (not instant)<br />
1 c. dark brown sugar, packed<br />
1/2 c. white sugar<br />
1 c. butter<br />
2 Tablespoons honey<br />
2 tsp pure vanilla extract<br />
2 Large eggs<br />
1 1/2 c. raisins<br />
1/2 c. chopped walnuts<br />
<br />
Preheat oven to 300 degrees.<br />
Combine flour, soda, salt, oats. Stir together, set aside.<br />
In large bowl, blend sugars with mixer at medium speed. Add butter and mix to create a grainy paste, scrape down sides of bowl, then add in honey, vanilla and eggs.<br />
Mix at medium speed until lite and fluffy.<br />
Add in flour mix, raisins and nuts, blend at low speed just till combined. Don't overmix.<br />
Drop by Tbsp. onto ungreased cookie sheets 1-1/2 inches apart Bake 18-22 minutes.<br />
<br />
I usually get about 3 dozen cookies. <br />

Fold in 14 ounces of flaked coconut, 3/4 cup of sweetened condensed milk & 1 teaspoon of extract. (I use 1/2 vanilla & 1/2 coconut or almond)<br />

Drop by tablespoon onto parchment lined cookie sheets.<br />
<br />
Bake at 300 degrees for 25 minutes.<br />
<br />
Makes approximately 2 1/2 dozen cookies. <br />

*Tips: let them cool slightly before transferring to a plate or they might stick to the plate.<br />

1 egg/Egg Beaters<br />
salt & pepper to taste<br />
chopped onion & garlic to taste (powders work fine if you're in a rush)<br />
Bread crumbs about 3/4 cup, enough to bind<br />
grated cheese to taste (I use Pecorino Romano)<br />
Sometimes I like to toss in a handful of raisins just like my grandma did :-) <br />

Mix all ingredients by hand, don't over mix but make sure it is all combined.<br />
Gently form balls by patting between your palms, dredge in flour. Place meatballs in hot oil. Brown on all sides. At this point I put them into my sauce & let them finish cooking that way. They can probably be finished in a medium oven but I only make meatballs with spaghetti so I've never tried.<br />

Grease cupcake pan.<br />

1 3/4 cups flour<br />
1/3 cup sugar<br />
2 teaspoons baking powder<br />
1/4 teaspoon salt <br />
1 beaten egg<br />
3/4 cup milk<br />
1/4 cup oil<br />
squirt of lemon juice<br />
<br />
Mix dry ingredients together in a bowl; I use a fork for all the mixing. Mix wet ingredients together in another bowl. Stir the wet ingredients into the dry ingredients until thoroughly combined.<br />
If doing plain muffins they are ready to cook now.<br />
If adding blueberries fold them in now; I use almost a cup of frozen.<br />
Place mix into muffin pan, about 1/4 cup each hole.<br />
Bake for 20 minutes.<br />

Wash & slice potatoes. Sometimes I peel them sometimes I don't, it depends what kind of potato I'm using.<br />
Layer potatoes in a baking dish. I use an 8x8 square or a 13x9. Sprinkle on salt, pepper & flour. Cut small slices of butter & scatter on top. Repeat this step until done with potatoes; I usually get 3 to 4 layers.<br />
Pour enough milk over to almost cover potatoes. <br />
Cover with foil & bake at 350 degrees for 30 minutes; remove foil & bake another 30 or so minutes until potatoes are soft.<br />
<br />
Sometimes I like to thinly slice an onion & scatter it through the layers.<br />
On special occasions I do half milk & half cream. <br />

1/4 cup, plus 3 tablespoons sugar<br />
2 tablespoons butter, melted<br />
1 teaspoon ground cinnamon<br />
1/2 teaspoon salt<br />
1/4 teaspoon vanilla extract<br />
2 boxes mini filo shells, 15 shells each<br />
1/2 cup water 1/4 cup honey<br />

Special equipment: 2 (12-cup) mini cupcake pans, food processor<br />

Arrange the pistachios, walnuts, and almonds on a baking sheet and toast in the oven until golden and fragrant, about 8 minutes. Let nuts cool slightly and add to a food processor along with the lemon zest, 3 tablespoons of sugar, butter, cinnamon, salt, and vanilla and pulse to combine.<br />
Place mini fillo shells in wells of 2 mini cupcake pans. Add 1 teaspoon of the nut mixture into each shell. Bake until filling is hot, about 10 minutes.<br />
Meanwhile, in a small saucepan over medium heat add the water, 1/4 cup sugar and honey and bring to a boil. Reduce heat to a simmer and cook until reduced and slightly thickened, 8 to 10 minutes. Pour 1 teaspoon syrup into each cup and allow it to soak in, then repeat with another teaspoon. Refrigerate at least 5 hours, or overnight.<br />

Unfortunately where I now live there is no where to get either. A few months ago I caught this episode of Cooking for Real where she made her own version of both.<br />
I've tried the kabobs, they were good. I didn't have any cucumber or plain yogurt so I didn't make the sauce. One of these days I'll remember to buy the phyllo cups & try the baklava.<br />

Lamb Kabobs with Tzatziki Sauce<br />

6 servings (makes roughly 12 kabobs)<br />

12 (6-inch) wooden skewers<br />
<br />
1 1/2 pounds ground lamb <br />
2 scallions, finely chopped<br />
2 teaspoons onion powder<br />
2 teaspoons chopped fresh oregano leaves<br />
1 teaspoon chopped fresh rosemary leaves<br />
1 teaspoon garlic powder<br />
1 teaspoon ground cumin <br />
1/2 teaspoon dried thyme<br />
Salt and freshly ground black pepper<br />
Oil, for brushing<br />
1 bag pita bread, at least 6 loaves<br />

Preheat grill to high.<br />
<br />
Soak skewers in water for 25 to 30 minutes. In a large bowl combine lamb, scallions, onion powder, oregano, rosemary, garlic powder, cumin, thyme, salt and pepper, to taste. Form meat around skewers, making an oblong sausage shape pressing and securing firmly. Refrigerate 30 minutes. Remove skewers from refrigerator. Brush grill with oil. Grill kabobs until charred on the outside and medium-rare on the inside, turning only once, about 3 minutes each side. Brush pita lightly with oil, and grill briefly on both sides to warm. Remove lamb kabobs from skewers and place 2 on each pita. Drizzle with Tzatziki Sauce to serve.<br />

Tzatziki Sauce:<br />
2 cups Greek strained yogurt<br />
1/2 cucumber, seeded and chopped<br />
1 garlic clove<br />
2 1/2 teaspoons hot sauce (recommended: Frank's Red Hot)<br />
1 teaspoon lemon juice<br />
Salt and freshly ground black pepper<br />

Add the yogurt, cucumber, garlic, hot sauce, lemon juice and zest in a food processor and blend until smooth. Season with salt and pepper, and transfer to a bowl. Refrigerate at least 1 hour before serving.<br />

1 can (16 ounce) refired beans<br />
1 container (16 ounce) sour cream<br />
1 package McCormick taco seasoning mix<br />
2 cups (8 ounces) shredded cheddar cheese<br />
1 cup prepared guacamole<br />
1 cup chopped tomatoes<br />
1/2 cup sliced green onions<br />
1/2 cup sliced black olives<br />

Spread beans into shallow serving dish.<br />
Mix sour cream & seasoning together in a small bowl; spread over beans.<br />
Layer cheese, guacamole, tomatoes, onions & olives.<br />
Serve with tortilla chips.<br />
