Honey-mustard chicken

I found this in a magazine last week on the same night I happened to be making chicken thighs. Mine had the bones in (plus I made a lot more than 4) & I didn't make the sauce; I used a prepared honey mustard dressing I had in the fridge. It was pretty good.

4 boneless, skinless chicken thighs
1/2 teaspoon salt divided
coarsely ground black pepper
4 tablespoons Dijon mustard
2 tablespoons honey
1 minced shallot
1/2 teaspoon dried thyme
1 pound small red potatoes halved
olive oil cooking spray

Preheat oven to 375 degrees.
Sprinkle chicken with 1/4 teaspoon salt & pepper. Place in a 13 x 9 baking dish. Combine mustard, honey, shallot & thyme in a small bowl to form a paste.Spread over thighs covering them completely.
Add potatoes to pan & spritz with oil spray. Sprinkle with remaining salt & pepper.
Bake about 50 minutes (stirring once) until potatoes & chicken are tender.

Serves 4.
