This began as a way to organize recipes I found in magazines - much easier than a bunch of papers piling up all over the place! I've also started sharing some of my own personal & favorite recipes.

Pineapple Sweet & Sour chicken

2 cups Minute white rice uncooked
1 can (20 oz) Dole pineapple chunks
2 Tbsp vegetable oil
1 medium red or green pepper cut into chunks
1/2 cup sliced mushrooms
1 pound boneless skinless chicken, cut into 1 inch pieces
1 cup sweet & sour sauce
2 Tbsp soy sauce

Prepare rice according to package dirctions.
Drain pineapple; reserve 2 Tbsp juice.
Heat oil in a large skillet over medium heat. Add peppers, onions, & mushrooms; cook until tender crisp. Remove vegetables from skillet & add chicken til browned & cooked through. Return vegetables to skillet, add sweet & sour sauce, soy sauce, pineapples & juice. Heat through.
Serve with rice.

Cook time - 20 minutes
Serves 6

Coconut Pops

I have not tried this recipe.
Taken from the June/July 2009 edition of Food Network Magazine.

Puree a 14 ounce can of coconut milk with the zest of 1 lime, the juice of 2 limes, 1/4 cup confectioners sugar & 1/4 cup shredded coconut.
Pour into small popsicle molds or 3 ounce paper cups. Insert wooden popsicle sticks.
Freeze several hours until firm.

Roasted Red Pepper Dip and Creamy Spinach Dip

~ I have not tried these recipes ~


1 12 oz jar roasted red peppers drained & chopped
1 clove of garlic
1/8 cup olive oil
1 cup crumbled feta cheese

Puree all until smooth. Season with salt & pepper, chill for 2 hours. Serve with crudites.


Creamy Spinach Dip
1 minced shallot
1 minced garlic clove
1 10 oz package frozen chopped spinach, thawed & squeezed dry
1 14 0z container 2 % Greek yogurt
zest & juice of 1 lemon
2 Tablespoons chopped dill
salt & pepper to taste

Puree all until smooth. Chill for 30 minutes. Serve with pitas or crudites.


* I would make my own peppers for the first one & I'd serve both of them with veggies, crackers, breadsticks & pitas.

Mango Relish

~ I have not tried this recipe ~


3 large ripe mangoes peeled and cubed
1/3 cup red onion, finely chopped
1 tablespoon vegetable oil
1/2 bunch scallions thinly sliced
2 tablespoons lime juice
1/4 teaspoon each of salt and pepper

Stir all ingredients together.

I would try this with chicken, fish  & pork.

Southwestern Salad

~ I have not tried this recipe ~
Southwestern Salad - serves 6

2 tablespoons olive oil
the juice of 1 lime
1/4 teaspoon each of salt, cumin & chili powder
pinch of pepper

Whisk together in a large bowl.
Stir in
1 cup thawed frozen corn kernels
1 15 1/2 ounce can of small white beans, rinsed & drained
1 finely chopped tomato
2 tablespoons finely chopped red onion

I've made a similar recipe but I used black beans. Also make sure your tomatoes are as firm as can be.
This can be prepared ahead of time & refrigerated however I prefer it at room temperature.
